Ingredients

  • ½ cup Butter
  • 1 cup Sugar
  • 3 Eggs
  • ½ cup Sour Cream
  • 2 tsp Yu Sencha Powder
  • OR 2 tsp Yu Matcha Powder
  • 1½ cups Flour
  • 2 tsp Coconut Milk
  • ¼ tsp Baking Powder
  • ⅛ tsp Baking Soda
  • 1 cup Powdered Sugar
  • 1 Lime, juiced
  • 1 Tbsp Butter, melted

Directions

  1. Preheat oven to 325° F.
  2. Beat butter until creamy. Add sugar until fluffy and very light.
  3. Add eggs and sour cream to the butter and sugar mixture; stir until smooth.
  4. In a separate bowl, combine flour, Yu Sencha or Yu Matcha, coconut milk, baking powder, and baking soda.
  5. Add dry mixture to the butter mixture and mix just until combined.
  6. Pour batter into greased and lightly floured 9x5x3 loaf pan. Bake for 60 minutes.*
  7. Mix lime juice and melted 1 Tbsp. butter with 1 cup powdered sugar.
  8. Frost the cake with the powdered sugar mixture.
