Ingredients

  • 2 c Flour, unbleached
  • 1 Tbsp Coconut, unsweetened shredded
  • 1 tsp Yu Hojicha Powder
  • ½ tsp Pumpkin Pie Spice
  • ½ tsp Salt
  • 1 tsp Baking Soda
  • ½ cup Sugar
  • ¼ cup Brown Sugar
  • 1 cup Pecans
  • 1 ½ cups Bananas, ripe and mashed
  • ¼ cup Greek Yogurt, plain
  • 2 Eggs
  • ¼ cup Peanut Oil

Directions

  1. Preheat the oven to 350° F.
  2. Prepare 9″ x 5″ x 3″ loaf pan: grease and flour all the sides.
  3. In a large bowl, whisk together the dry ingredients.
  4. Add 1 cup pecans to dry ingredients and stir well.
  5. In a separate bowl, whisk together the rest of the ingredients.
  6. Add the wet ingredients to the dry ingredients and stir until combined.
  7. Scrape the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, until an inserted toothpick comes out clean.
  9. Remove the bread from the oven and cover it with foil to keep it moist.
  10. Allow it to cool completely in the pan.
  11. Remove the bread out of the pan. Slice and serve.
