Ingredients

  • ¼ c shredded coconut
  • 1 Tbsp Yu Matcha
  • ½ c dates
  • ¾ c raw or sprouted pumpkin seeds
  • 2 Tbsp virgin coconut oil
  • ¼ tsp sea salt
  • 8 oz white melting wafers

Directions

  1. In a blender or food processor, combine the shredded coconut, dates, pumpkin seeds, coconut oil, matcha, and sea salt until smooth.
  2. Pat the dough into a rectangular shape and divide it into 24 equal portions.
  3. Line a tray with parchment paper.
  4. Shape each portion into an egg shape with a flat bottom so they stand upright on the tray.
  5. Chill the tray in the refrigerator for at least 30 minutes to firm up the bites.
  6. Melt the white melting wafers according to the package instructions.
  7. Dip or drizzle the chilled energy bites with the melted white chocolate and place them back on the parchment-lined tray.
  8. Let them sit until the chocolate is fully set.
